Description

This crispy air fryer chicken sandwich is perfect for a quick meal, featuring juicy chicken brined in pickle juice and buttermilk, breaded and air-fried to golden perfection.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup pickle juice
  • 1/2 cup buttermilk
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon powdered sweetener
  • 1 teaspoon cayenne pepper (Optional)
  • 1 egg (beaten)
  • cooking oil
  • 2 buns (brioche)
  • 4 slices dill pickle chips
  • 2 slices leaf lettuce (Optional)
  • 4 slices fresh tomatoes (Optional)
  • 1/4 cup mayo
  • 2 tablespoons honey
  • 2 teaspoons BBQ Sauce (hickory smoked)
  • 2 teaspoons Dijon mustard
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon xanthan gum

Instructions

  1. In a sealable bag or large bowl, brine the chicken breasts with pickle juice and buttermilk for 30 minutes.
  2. In a large bowl, combine flour, paprika, garlic powder, salt, pepper, and sweetener.
  3. In another bowl, beat the egg.
  4. Spray the air fryer basket with cooking oil.
  5. Remove the chicken from the marinade, dredge in the beaten egg, and then coat with the flour mixture. Place in the air fryer basket.
  6. Spritz the top of the chicken with peanut oil.
  7. Air fry at 400 degrees for 15 minutes.
  8. Flip the chicken using tongs and air fry for an additional 5-7 minutes until crisp and a meat thermometer reads 165 degrees.
  9. Toast the buns for 3-4 minutes at 400 degrees.
  10. Assemble the sandwich with chicken, mayo, honey, BBQ sauce, and mustard, along with optional lettuce, tomatoes, and pickles.
  11. Mix xanthan gum with 2 teaspoons of the sauce in a separate bowl, stir to thicken, and combine with the sauce.
