Description

Delicious and vibrant blueberry crinkle cookies, perfect for summer treats!

Ingredients

Scale
  • 1 cup freeze-dried blueberries
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup powdered sugar (for coating)

Instructions

  1. Blitz the Berries: Start by placing your freeze-dried blueberries in a blender or food processor. Pulse until they become a fine powder. You’ll immediately notice the deep berry aroma—it’s like summer in a jar.
  2. Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy. This should take about 2–3 minutes with a hand or stand mixer. The mixture should be pale and airy.
  3. Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined. The mixture may look slightly curdled, but don’t worry—it will come together once the dry ingredients are added.
  4. Mix in Blueberry Powder: Add your blueberry powder to the wet mixture and mix until fully incorporated. The dough will take on a lovely purple hue, like something out of a fairy tale.
  5. Combine the Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Slowly add this to the blueberry mixture and mix just until the dough comes together. Avoid overmixing to keep the cookies tender.
  6. Chill the Dough: Cover the dough and chill it in the refrigerator for at least 1 hour. This step helps the cookies hold their shape and develop their signature crinkle effect during baking.
  7. Preheat Oven and Prep Coating: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Roll tablespoon-sized balls of dough, then generously coat each one in powdered sugar.
  8. Bake Until Crinkled and Set: Place cookies on the baking sheet, spaced about 2 inches apart. Bake for 10–12 minutes, or until the edges are set and the tops have crinkled beautifully. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • These cookies have a wonderful texture when baked just right; watch closely to avoid overbaking.
  • The blueberry powder can also be used in other recipes for natural color and flavor.
