A delicious and creamy chicken zucchini casserole that’s perfect for a comforting meal.
Ingredients

- 3 cups cooked chicken breast, shredded or diced
- 2 medium zucchinis, thinly sliced
- 1 cup sour cream
- 1 cup shredded mozzarella
- 1 cup shredded cheddar
- 1/4 cup grated parmesan
- 1/2 small onion, finely chopped
- 2 garlic cloves, minced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon black pepper
- Salt to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped
Instructions
- Prep aroma base — Sauté onion & garlic till fragrant.
- Mix filling — Combine chicken, aromatics, sour cream, thyme, pepper, salt, and half the cheeses.
- Layer — Add half mixture to the dish, add zucchini slices, then remaining mixture.
- Cheese top — Add remaining mozzarella, cheddar & parmesan.
- Bake — 375°F (190°C) for 25–30 min until golden & bubbly.
- Garnish — Sprinkle parsley before serving.
Notes
- This dish can be prepared ahead of time and baked just before serving.
- For a healthier version, substitute low-fat cheese and sour cream.
