Description

Delicious Cheesy Potato Burritos filled with savory ingredients and a hint of Tex-Mex flavor.

Ingredients

Scale
  • 4 large russet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • ½ cup sour cream
  • ½ cup salsa
  • ¼ cup chopped fresh cilantro

Instructions

  1. Cook the Potatoes: Start by heating olive oil in a large skillet over medium heat. Add the diced potatoes in a single layer. Let them cook undisturbed for a few minutes so they develop that beautiful golden crust. Stir occasionally and cook for about 10–12 minutes until they are tender and lightly crispy on the outside. I always listen for that gentle sizzle—it is the sound of flavor building.
  2. Add Aromatics and Spices: Add the chopped onion and cook until soft and translucent. Stir in the garlic, chili powder, cumin, smoked paprika, salt, and pepper. The aroma at this point is rich and warm, filling the kitchen with that unmistakable Tex-Mex comfort scent. Cook for another 2–3 minutes to let the flavors blend.
  3. Warm the Tortillas: Warm your flour tortillas in a dry skillet or microwave until soft and pliable. This step makes rolling much easier and prevents tearing.
  4. Assemble the Burritos: Spoon the potato mixture into the center of each tortilla. Sprinkle generously with cheddar and Monterey Jack cheese. Add a spoonful of sour cream and salsa. Fold in the sides, then roll tightly from the bottom up, tucking everything in snugly.
  5. Crisp Them Up (Optional but Recommended): Place the rolled burritos seam-side down in a skillet over medium heat. Cook for 2–3 minutes per side until golden and slightly crispy. This extra step transforms good burritos into unforgettable Cheesy Potato Burritos with a satisfying crunch. Serve warm, garnished with fresh cilantro.

Notes

  • Make sure to not overcrowd the skillet when cooking the potatoes for even browning.
  • Serve with extra salsa and sour cream for dipping.
