Ingredients

- 4 medium russet potatoes (diced)
- 2 cups fresh kale (washed and chopped)
- 1 cup heavy cream
- 4 cups low-sodium chicken broth
- 3 cloves garlic (minced)
- 1 medium yellow onion (chopped)
- 1 tsp red pepper flakes (adjust to taste)
Instructions
- In a large pot over medium heat, brown the Italian sausage until fully cooked.
- Add chopped onion and minced garlic; sauté until the onion is translucent.
- Pour in chicken broth and diced potatoes. Bring to a boil, then simmer for about 15 minutes until potatoes are tender.
- Stir in the chopped kale and heavy cream; let simmer for an additional few minutes.
- Season with red pepper flakes, salt, and pepper to taste before serving hot.
