- 1 cup cooked lump crab meat, drained and flaked
- 2 green onions, finely chopped
- 1 teaspoon garlic powder

- 1/2 teaspoon soy sauce

- 1/4 teaspoon black pepper
- 1 package refrigerated biscuit dough (8-count)
- 1 egg, beaten
- Vegetable oil, for frying
Instructions
- Prepare the Filling: In a medium bowl, combine the softened cream cheese, crab meat, chopped green onions, garlic powder, onion powder, soy sauce, salt, and pepper. Stir until smooth and evenly blended. The mixture should be creamy but thick enough to hold its shape. This is where the magic begins. Taste the filling at this stage and adjust seasoning slightly if needed. The flavor should be savory, creamy, and just slightly sweet from the crab.
- Prepare the Dough: Separate the biscuit dough and gently flatten each piece into a small circle using your hands or a rolling pin. Don’t worry about making them perfectly round—rustic works beautifully here.
- Fill and Seal: Place about one tablespoon of the crab mixture into the center of each flattened biscuit. Carefully fold the edges up and around the filling, pinching tightly to seal. Roll gently between your palms to form a smooth ball. It’s important to seal them well so the filling stays tucked inside while frying.
- Egg Wash: Lightly brush each ball with beaten egg. This helps create that deep golden finish once fried.
- Fry to Perfection: Heat vegetable oil in a deep pot to 350°F (175°C). Carefully lower 2–3 bombs at a time into the hot oil. Fry for 3–4 minutes, turning occasionally, until golden brown and cooked through. The outside should be crisp and evenly browned. Remove with a slotted spoon and place on paper towels to drain.
- Serve the Crab Rangoon Bombs warm with sweet chili sauce or a simple soy dipping sauce.
