Ingredients

- 1 lb (450g) boneless chicken pieces, cooked and shredded
- 2 (28 oz / 794g each) cans crushed tomatoes
- 1 cup (240ml) heavy cream
- 2 cups (480ml) chicken broth
- 1/2 cup (12g) fresh basil, chopped
- 3 cloves garlic, minced
- 1 tsp onion powder
- 2 tbsp (28g) butter
Instructions
- In a large pot, melt the butter over medium heat and sauté the minced garlic for about 1 minute, until fragrant, being careful not to burn it.
- Add the crushed tomatoes, chicken broth, and onion powder to the pot. Stir well to combine all ingredients.
- Bring the mixture to a gentle simmer and let it cook for about 15 minutes, allowing the flavors to meld together.
- Stir in the shredded chicken and heavy cream. Continue heating for about 5 minutes, just until the soup is warmed through (do not let it boil once the cream is added).
- Stir in the freshly chopped basil right before serving to preserve its vibrant color and fresh flavor.

- This soup can be served with crusty bread for a complete meal.
