- 4 large egg whites
- 1 cup granulated sugar
- 1 cup roasted pecans, chopped
- 1 tsp pure vanilla extract
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1 tbsp lemon juice
Instructions
- Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a large bowl, whip egg whites until soft peaks form. Gradually add sugar until stiff peaks form.
- Fold in chopped pecans and vanilla extract gently.
- Spoon meringue onto the baking sheet, creating nests for filling.
- Bake for about 1 hour until dry and crisp outside, slightly soft inside.
- While cooling, whip heavy cream with powdered sugar and lemon juice until soft peaks form.
- Once meringues are cool, fill them with whipped cream and serve.
