Description

A delicious loaf made with peanut butter and carrots, perfect for a healthy snack.


Ingredients

Scale
  • 1 large egg
  • 1/2 cup creamy all-natural peanut butter
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/3 cup honey (or maple syrup)
  • 1 cup shredded carrots
  • 1 cup Almond flour (or whole wheat)

Instructions

  1. Preheat the oven to 350° F.
  2. In a medium bowl, combine the egg, peanut butter, oil, vanilla, and honey (optional).
  3. Stir in the carrots, then gradually add the flour until well combined.
  4. Pour into a small, lightly greased baking pan. I use a 5 x 3 inch mini loaf pan and it’s perfect; a 6 cup ring mold also works.
  5. Bake for 30 minutes, or until set.
  6. Turn onto a wire rack and let cool completely.

Notes

  • Substitute honey with maple syrup for a vegan option.
  • You can use whole wheat flour instead of almond flour.
