A delicious loaf made with peanut butter and carrots, perfect for a healthy snack.
Ingredients

- 1 large egg
- 1/2 cup creamy all-natural peanut butter
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/3 cup honey (or maple syrup)
- 1 cup shredded carrots
- 1 cup Almond flour (or whole wheat)
Instructions
- Preheat the oven to 350° F.
- In a medium bowl, combine the egg, peanut butter, oil, vanilla, and honey (optional).
- Stir in the carrots, then gradually add the flour until well combined.
- Pour into a small, lightly greased baking pan. I use a 5 x 3 inch mini loaf pan and it’s perfect; a 6 cup ring mold also works.
- Bake for 30 minutes, or until set.
- Turn onto a wire rack and let cool completely.
Notes
- Substitute honey with maple syrup for a vegan option.
- You can use whole wheat flour instead of almond flour.
