Description
A savory Filipino beef stew cooked with vegetables and spices.
Ingredients

- ¼ cup canola oil
- 2 large potatoes, peeled and cut into 2-inch cubes
- 2 large carrots, peeled and cut into 2-inch cubes
- 1 medium onion, peeled and chopped
- 4 cloves garlic, peeled and minced
- 2 pounds bottom round beef roast, cut into 2-inch cubes
- 2 cups tomato sauce
- 2 tablespoons tomato paste
- 2 cups water
- 10 Thai chili peppers, minced
- ½ cup green olives, pitted
- ½ cup liver spread (or pâté)
- ½ cup cheddar cheese, shredded
- 1 small green bell pepper, seeded and cut into cubes
- 1 small red bell pepper, seeded and cut into cubes
- Salt and pepper to taste
Instructions
- Heat oil in a wide pan over medium heat. Add potatoes and carrots, cooking until lightly browned, about 5-7 minutes. Remove from pan and drain on paper towels.
- Reserve about 2 tablespoons of oil in the pan. Add chopped onions and minced garlic, cooking until softened, approximately 2-3 minutes.
- Add beef cubes to the pan and cook, stirring occasionally, until lightly browned on all sides, about 8-10 minutes.
- Pour in tomato sauce, tomato paste, water, and minced chili peppers. Bring the mixture to a boil, skimming off any scum that rises to the surface.
- Season the stew with salt and pepper to taste.
- Reduce heat to low, cover the pan, and simmer for about 1 to 1½ hours, or until the beef is tender.
- Add the browned potatoes and carrots back to the pan and continue cooking until the vegetables are tender, about 15-20 minutes.
- Stir in the liver spread and shredded cheese, mixing well until the cheese melts and the sauce thickens, about 3-5 minutes.
- Add the green and red bell peppers and green olives, cooking for another 1-2 minutes until the peppers are tender yet still crisp.
- Serve the beef caldereta hot over steamed white rice.
Notes
- For a spicier stew, increase the amount of Thai chili peppers.
- Serve with steamed white rice for a complete meal.
