- 1 pound large shrimp, peeled and deveined
- 2 cups fresh or frozen corn kernels
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 4 cups seafood or chicken broth
- 1 cup heavy cream
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon smoked paprika
- 1 teaspoon cayenne pepper (adjust for heat)
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- In a large pot, melt the butter over medium heat. Add the diced onion, bell pepper, and celery. Sauté for about 5 minutes until softened.
- Stir in the minced garlic and cook for an additional minute, allowing the aroma to enhance the dish.
- Sprinkle the flour over the sautéed vegetables and stir well to combine. Cook for about 1-2 minutes to eliminate the raw flour taste.
- Gradually pour in the seafood or chicken broth, whisking continuously to prevent lumps. Bring the mixture to a gentle boil.
- Stir in the corn kernels, smoked paprika, cayenne pepper, and season with salt and pepper. Reduce heat and let the mixture simmer for about 10 minutes.
- Add the peeled and deveined shrimp to the pot and cook for an additional 5-7 minutes, or until the shrimp are opaque and cooked through.
- Lower the heat and slowly stir in the heavy cream, making sure not to boil after adding it. Adjust seasoning as necessary.
- For an extra creamy consistency, you can use an immersion blender to blend a portion of the soup. This is optional and depends on personal texture preference.
- Ladle the bisque into bowls and garnish with fresh parsley. Serve warm with lemon wedges on the side.
