Delicious cherry hand pies made with fresh cherries and a buttery pie crust.

- 2 cups fresh cherries, pitted
- ½ cup granulated sugar
- 1 tbsp lemon juice
- 1 package (14 oz) pie crust (store-bought or homemade)
- 1 egg (for egg wash)
Instructions
- Prepare the filling by combining cherries, sugar, and lemon juice in a saucepan over medium heat until bubbling and sugar dissolves.
- Roll out pie crust on a floured surface to about 1/8 inch thick and cut into circles (6 inches diameter).
- Spoon 1 tablespoon of cherry mixture onto one half of each circle.
- Fold the dough over the filling to create pockets and crimp edges with a fork to seal.
- Brush each pie with whisked egg for a golden finish.
- Bake on a parchment-lined baking sheet at 375°F (190°C) for 20-25 minutes until golden brown.
Notes
- Make sure the cherries are ripe for the best flavor.
- Adjust the sugar based on the sweetness of the cherries.
