Description

This delicious pumpkin bread is perfect for fall, filled with spices and toasted pecans.


Ingredients

  • 1 cup pumpkin puree
  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 cup chopped pecans (toasted)
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup powdered sugar (for the glaze)
  • 2 tbsp milk (for the glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, whisk together the pumpkin puree, eggs, and vegetable oil until smooth.
  3. In another bowl, combine flour, brown sugar, granulated sugar, baking powder, baking soda, cinnamon, and salt.
  4. Gradually fold the dry ingredients into the wet mixture until just combined; then gently stir in the chopped pecans.
  5. Pour the batter into the prepared loaf pan and bake for 60–70 minutes or until a toothpick inserted comes out clean.
  6. Allow to cool on a wire rack before drizzling with the glaze made from mixing powdered sugar and milk.
