Description

Delicious soft molasses ginger cookies with a hint of spice, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • ½ tsp salt
  • ¾ cup unsulfured molasses
  • ½ cup brown sugar
  • ½ cup granulated sugar (plus more for rolling)
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup unsalted butter (melted)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, and salt until well combined.
  3. In another bowl, mix melted butter with brown sugar and granulated sugar until creamy. Stir in molasses, egg, and vanilla extract until smooth.
  4. Gradually add dry ingredients to wet mixture; mix until just combined.
  5. Scoop tablespoon-sized balls of dough, roll in granulated sugar, and place on prepared sheets about two inches apart.
  6. Bake for 10-12 minutes or until edges are set but centers remain soft. Cool on sheets for five minutes before transferring to wire racks.

  • For chewier cookies, chill the dough before baking.
