Ingredients

- 2 cups all-purpose flour
- 2 tsp baking soda
- 1 tsp ground ginger
- 1 tsp cinnamon
- ½ tsp salt
- ¾ cup unsulfured molasses
- ½ cup brown sugar
- ½ cup granulated sugar (plus more for rolling)
- 1 large egg
- 1 tsp vanilla extract
- ½ cup unsalted butter (melted)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, ginger, cinnamon, and salt until well combined.
- In another bowl, mix melted butter with brown sugar and granulated sugar until creamy. Stir in molasses, egg, and vanilla extract until smooth.
- Gradually add dry ingredients to wet mixture; mix until just combined.
- Scoop tablespoon-sized balls of dough, roll in granulated sugar, and place on prepared sheets about two inches apart.
- Bake for 10-12 minutes or until edges are set but centers remain soft. Cool on sheets for five minutes before transferring to wire racks.
Notes
- For chewier cookies, chill the dough before baking.
- Store in an airtight container for up to a week.
