Description

Deliciously baked cod fillets enhanced with garlic and lemon, perfect for a quick dinner.


Ingredients

  • 4 cod fillets (68 oz. each, about 1 inches thick)
  • 6 tablespoons unsalted butter (softened)
  • 2 garlic cloves (minced)
  • 2 tablespoons fresh parsley (minced)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 2 tablespoons lemon juice
  • 68 lemon slices

Instructions

  1. Preheat oven to 400°F. Lightly grease a 9×13-inch baking dish.
  2. Pat the cod fillets dry with paper towels to remove excess moisture. Arrange them in a single layer in the prepared baking dish.
  3. In a small bowl, combine the softened butter, minced garlic, parsley, salt, pepper, and paprika. Mix until smooth and well blended.
  4. Spread about 1½ tablespoons of the butter mixture evenly over the top of each fillet. Drizzle the lemon juice over the fish, then top each piece with 1-2 lemon slices.
  5. Bake for 12-15 minutes, or until the cod is opaque, flakes easily with a fork, and reaches an internal temperature of 140°F.
  6. Remove from the oven and let rest for 2-3 minutes. Spoon the pan juices over the fillets before serving, if desired.

Notes

  • For a crispy topping, you can sprinkle some breadcrumbs on top before baking.
  • Serve with a side of steamed vegetables or a fresh salad for a complete meal.
