Description
A delicious and easy chicken curry made in the crock pot with tender chicken, potatoes, and coconut milk.
Ingredients

- 1 1/2 pound chicken breasts (diced into 1 inch pieces)
- 1 pound Russet Potatoes (peeled and diced into 1 inch pieces)
- 2 carrots (peeled and diced)
- 2 tablespoons yellow curry powder
- 1 can full fat coconut milk (14 oz)
- 1 fresh lime (juiced)
- 1 tablespoon minced garlic
- 1/2 cup chicken broth
- 1/2 teaspoon ground ginger
- 2 tablespoons brown sugar
- 1 teaspoon salt
- 2 tablespoons cornstarch
Instructions
- Add all the ingredients to a crock pot. Stir to thoroughly combine all the ingredients.
- Cook on low for 4-5 hours.
- Serve as is or over rice and enjoy!

- This dish can be served with rice or naan for a complete meal.
- Adjust the level of curry powder according to your taste preference.
