Orange Iced Cookies

Description

Deliciously soft orange cookies topped with a sweet orange icing.


Ingredients

Scale
  • ½ cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • ⅓ cup almond milk (you can use regular milk as well)
  • 1 teaspoon vanilla extract
  • 2 tablespoons fresh orange juice (or ½ teaspoon orange extract)
  • 1 tablespoon orange zest (optional)
  • 3 ¼ cups all purpose flour
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • 2 cups powdered sugar
  • 3 tablespoons orange juice
  • 1 tablespoon almond milk (or milk)

Instructions

  1. Preheat oven to 350 degrees. Line baking sheet with parchment paper.
  2. In a bowl, sift together flour, baking powder, and salt, set aside.
  3. In another bowl, using a mixer, cream together butter and sugar until light and fluffy. Add in orange juice, milk, eggs, vanilla, almond milk and orange zest, optional and continue mixing until combined.
  4. Add 1/2 of the dry mixture to the wet mixture and mix. Add rest of the flour mixture and again mix together until combined.
  5. Using a medium size cookie scoop, drop scooped cookies out on parchment paper lined baking sheet and bake about 8-10 minutes, or until cookies do not sink or imprint when lightly touched on top. Do not over-bake. Cookies should not be brown.
  6. Let cookies set for a couple of minutes on the baking sheets before transferring to a wire rack and then frost with the yummy orange icing!
  7. In a shallow bowl, mix powdered sugar and orange juice in a bowl. Add in milk and continue stirring until mixed well and it’s a nice thick consistency, yet pourable.
  8. Dip cooled cookies in icing and allow to set on a cookie rack.
  9. After icing has set, seal cookies to keep soft.

  • Cookies can be stored in an airtight container to maintain softness.
  • Best enjoyed fresh but can last for several days.
