Description
This delicious oven roasted chicken dish combines tender chicken breasts with Yukon Gold potatoes and fresh asparagus, seasoned to perfection.

- 4 pieces boneless and skinless chicken breasts
- 1 pound Yukon Gold potatoes
- 1 bunch fresh asparagus
- 3 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 lemon (for juice)
- 1 teaspoon fresh thyme or rosemary (optional)
- to taste salt
- to taste freshly cracked black pepper
Instructions
- Preheat oven to 200°C (400°F).
- Cut potatoes into bite-sized pieces.
- Toss potatoes with 2 tablespoons olive oil, paprika, garlic powder, salt, and pepper.
- Spread potatoes on a baking tray.
- Roast for 15 minutes.
- Season chicken with remaining olive oil, salt, and pepper.
- Add chicken to the tray with potatoes.
- Roast for another 15 minutes.
- Add asparagus to the tray and toss lightly.
- Roast for 8–10 more minutes until chicken is cooked through.
- Squeeze fresh lemon juice over the dish before serving.
- Garnish with fresh herbs if desired.
