Description

This delicious oven roasted chicken dish combines tender chicken breasts with Yukon Gold potatoes and fresh asparagus, seasoned to perfection.


Ingredients

Scale
  • 4 pieces boneless and skinless chicken breasts
  • 1 pound Yukon Gold potatoes
  • 1 bunch fresh asparagus
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 lemon (for juice)
  • 1 teaspoon fresh thyme or rosemary (optional)
  • to taste salt
  • to taste freshly cracked black pepper

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Cut potatoes into bite-sized pieces.
  3. Toss potatoes with 2 tablespoons olive oil, paprika, garlic powder, salt, and pepper.
  4. Spread potatoes on a baking tray.
  5. Roast for 15 minutes.
  6. Season chicken with remaining olive oil, salt, and pepper.
  7. Add chicken to the tray with potatoes.
  8. Roast for another 15 minutes.
  9. Add asparagus to the tray and toss lightly.
  10. Roast for 8–10 more minutes until chicken is cooked through.
  11. Squeeze fresh lemon juice over the dish before serving.
  12. Garnish with fresh herbs if desired.
