Description
This chicken salad is made with rotisserie chicken, mayo, celery, scallions, and more for a delicious and easy meal.
Ingredients

- 2 cups chopped rotisserie chicken
- 1/2 cup mayo
- 1/2 cup sour cream
- 1/2 cup celery, sliced thin
- 1/4 cup scallions, sliced thin
- 1 tsp garlic powder
- 1/2 cup sliced almonds
- 1/2 cup all-natural dried cranberries or cherries
Instructions
- If using a whole rotisserie chicken, remove the meat from the chicken and chop into small pieces. A food processor can make this easy; simply pulse the chicken pieces for a count of 5.
- If using baked chicken breasts, chop about 2 cups into small pieces either by hand or in a food processor.
- Add all other ingredients and mix well.
Notes
- This chicken salad can be served on its own, as a sandwich, or over a bed of lettuce.
