Description

This chicken salad is made with rotisserie chicken, mayo, celery, scallions, and more for a delicious and easy meal.


Ingredients

Scale
  • 2 cups chopped rotisserie chicken
  • 1/2 cup mayo
  • 1/2 cup sour cream
  • 1/2 cup celery, sliced thin
  • 1/4 cup scallions, sliced thin
  • 1 tsp garlic powder
  • 1/2 cup sliced almonds
  • 1/2 cup all-natural dried cranberries or cherries

Instructions

  1. If using a whole rotisserie chicken, remove the meat from the chicken and chop into small pieces. A food processor can make this easy; simply pulse the chicken pieces for a count of 5.
  2. If using baked chicken breasts, chop about 2 cups into small pieces either by hand or in a food processor.
  3. Add all other ingredients and mix well.

  • This chicken salad can be served on its own, as a sandwich, or over a bed of lettuce.
