- 1 ½ pounds carrots
- 2 tablespoons olive oil
- ⅓ cup freshly grated parmesan cheese
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat the oven to 425°F (220°C) and line a sheet pan with parchment paper.
- Peel and slice carrots into equal-sized chunks. Boil in salted water for 10-12 minutes until fork-tender.
- Drain and let carrots steam dry briefly, then place them on the prepared baking sheet.
- Using a flat-bottomed glass or potato masher, gently smash each carrot until flattened.
- Drizzle or brush carrots with olive oil. Sprinkle garlic powder, salt, pepper, and parmesan cheese evenly over the top.
- Roast for 25-30 minutes or until edges are crispy and golden brown. Rotate the pan halfway through roasting.
- Garnish with chopped parsley and serve hot with your favorite dipping sauce.
