Description

Delicious and crispy roasted carrots, perfect as a side dish.


Ingredients

  • 1 ½ pounds carrots
  • 2 tablespoons olive oil
  • ⅓ cup freshly grated parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat the oven to 425°F (220°C) and line a sheet pan with parchment paper.
  2. Peel and slice carrots into equal-sized chunks. Boil in salted water for 10-12 minutes until fork-tender.
  3. Drain and let carrots steam dry briefly, then place them on the prepared baking sheet.
  4. Using a flat-bottomed glass or potato masher, gently smash each carrot until flattened.
  5. Drizzle or brush carrots with olive oil. Sprinkle garlic powder, salt, pepper, and parmesan cheese evenly over the top.
  6. Roast for 25-30 minutes or until edges are crispy and golden brown. Rotate the pan halfway through roasting.
  7. Garnish with chopped parsley and serve hot with your favorite dipping sauce.
