Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 lime (juice and zest)

  • 1/4 cup fresh cilantro, chopped
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • Warm tortillas for serving

Instructions

  1. Rinse the shrimp under cold water and pat them dry with paper towels.
  2. In a bowl, combine olive oil, garlic, chili powder, cumin, lime juice, lime zest, salt, and pepper. Add the shrimp and toss to coat evenly. Let it marinate for 15 minutes.
  3. Heat a skillet over medium-high heat. Add the marinated shrimp to the skillet, cooking for about 3-4 minutes on each side until they turn pink and opaque.
  4. Incorporate diced tomatoes and red onion into the skillet, stirring to combine. Allow everything to cook for an additional 2-3 minutes until the vegetables are tender.
  5. Stir in the chopped cilantro and adjust seasoning if necessary. Remove from heat once everything is heated through.
  6. Warm the tortillas in a separate skillet or microwave, keeping them covered to retain heat.
  7. Spoon the shrimp mixture onto the warmed tortillas and garnish with additional cilantro.
