Description

A hearty and flavorful beef and rice casserole that combines ground beef, rice, and beans in a savory dish.


Ingredients

  • 450g lean ground beef
  • 185g long-grain white rice, uncooked
  • 425g black beans, rinsed
  • 280g diced tomatoes with green chilies
  • 480ml beef broth
  • 110g shredded cheddar cheese
  • 1 tbsp taco seasoning
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet, brown the ground beef over medium heat; drain fat.
  2. Stir in the rice, black beans, tomatoes with chilies, beef broth, and taco seasoning.
  3. Bring to a boil, then reduce heat to low and cover.
  4. Simmer for 18-20 minutes until rice is tender and liquid is absorbed.
  5. Sprinkle with cheese, cover for 1 minute to melt, and garnish with cilantro.
