Instructions

  1. Rinse the fennel bulb under cold water and pat dry. Remove tough outer layers, slice it thinly.
  2. Core the apples and slice them thinly, tossing in lemon juice to prevent browning.
  3. In a large bowl, combine sliced fennel and apples. Add olive oil, honey, salt, and pepper; toss gently until well-coated.
  4. If using fresh herbs, fold them in now for added flavor.
