Large bell peppers not only serve as edible bowls but also bring a natural sweetness that balances the savory filling. Choose vibrant colors to make your dish visually appealing and even more delicious.
Pizza Sauce
For an authentic taste, I love Rao’s pizza sauce for its rich flavor and simplicity. Any quality pizza sauce can work, but there’s something special about Rao’s that makes it a household favorite.

Cooking Tips and Notes
Cooking the Sausage: Achieving the Right Texture
To nail that savory filling for your Sausage and Pepperoni Pizza Stuffed Peppers, cooking the sausage properly is crucial. Start by using high-quality sausage; whether you choose spicy Italian or a milder variety, you’ll want to remove it from its casing. Brown the sausage in a skillet over medium heat, breaking it apart with a wooden spoon. Aim for a nice, golden color with a slightly crispy texture—this enhances the flavor and adds a satisfying bite to your peppers.
Prepping Peppers: Tips for Flawless Halving and Filling
Halving your bell peppers can seem daunting, but with a few tips, you’ll nail it every time. Choose peppers with a uniform shape to ensure they stand up nicely during baking. Slice them in half from top to bottom, taking care not to cut through the stem if you want to keep it intact for presentation. To fill them effortlessly, use a spoon to scoop out the seeds and membranes. This creates the perfect pocket for your delicious sausage mixture, ensuring every bite is loaded with flavor.
Layering Cheese: Achieving the Ultimate Cheese Pull
No Sausage and Pepperoni Pizza Stuffed Peppers are complete without ooey-gooey cheese. For that ultimate cheese pull, consider layering different cheeses. Start with a base of mozzarella for its meltiness, then sprinkle some provolone or parmesan on top for added flavor. Ensure you cover the filling completely, which not only enhances the visual appeal but also keeps the stuffing moist. Bake until bubbly and golden. When you pull a pepper from the dish, the cheese should stretch, creating that Instagram-worthy moment you won’t want to miss!
Serving Suggestions
Satisfying your cravings with Sausage and Pepperoni Pizza Stuffed Peppers can be even more delightful when paired with the right sides. Here are a few suggestions to elevate your meal experience.

Toss in some olives or feta for added flavor. This combination not only enhances your meal but also introduces a refreshing crunch that balances the savory stuffed peppers beautifully.
Enjoying with a Side of Garlic Bread
For those cozy nights, serving your Sausage and Pepperoni Pizza Stuffed Peppers with warm garlic bread creates a comforting vibe. The buttery, garlicky bread is ideal for soaking up any drippings while adding an indulgent touch. It’s a familiar comfort food pairing that never fails to impress—perfect for sharing with loved ones!

FAQ about Sausage and Pepperoni Pizza Stuffed Peppers
Can I make these stuffed peppers vegetarian?
Absolutely! You can easily adapt the Sausage and Pepperoni Pizza Stuffed Peppers to be vegetarian. Simply replace the sausage and pepperoni with your favorite plant-based alternatives, like crumbled tempeh or a veggie sausage. Add in diced mushrooms or spinach for a hearty texture that feels just as satisfying. Don’t forget to keep the cheesy goodness! Use a mix of mozzarella and parmesan to maintain that classic pizza flavor.
How do I keep the peppers from getting soggy?
A common dilemma with stuffed peppers is ensuring they maintain a good texture, despite the juicy filling. To prevent sogginess, try the following tips:
- Parboil the peppers: Give your bell peppers a quick boil for about 5 minutes before stuffing them. This helps soften them slightly while keeping them firmer during baking.
- Pre-roast the peppers: Roast the peppers in the oven without the stuffing for a few minutes. This seals in moisture and maintains their structure.
- Use less sauce: If your filling includes sauce, be mindful of how much you add. Too much liquid will make the peppers soggy, so use it sparingly or consider serving extra sauce on the side instead.
What other ingredients can I add to the filling?
Get creative with your filling! Alongside the traditional sausage and pepperoni, consider these additions to elevate your Sausage and Pepperoni Pizza Stuffed Peppers:
- Vegetables: Chopped onions, bell peppers, or zucchini can add body and flavor.
- Cheeses: Mix in some ricotta or shredded cheddar for added creaminess alongside the mozzarella.
- Herbs and Spices: Sprinkle in some Italian seasoning, fresh basil, or red pepper flakes for a bit of flair.
- Olives or Jalapeños: For a tangy kick, olives can bring depth, while jalapeños can spice things up.
With this kind of flexibility, you can tailor your stuffed peppers to suit your taste and satisfy your cravings!

Pizza Stuffed Peppers
- Total Time: 1 hour
- Yield: 6 servings 1x
- Diet: Gluten-Free
Description
Delicious pizza-inspired stuffed peppers filled with Italian sausage, cheese, and pepperoni.
Ingredients
- 19 oz Italian sausage or turkey Italian sausage links, uncooked
- 1 T olive oil
- 1 small onion, chopped
- 1 T minced garlic
- 13 oz jar Rao’s pizza sauce
- 2 tsp dried oregano
- 3 large bell peppers, cut in half lengthwise and stem and seeds removed
- 3 oz pepperoni
- 2 1/2 cups grated Mozzarella cheese
Instructions
- Preheat oven to 375F/190C. Spray a 9″ x 13″ casserole dish or large baking sheet with non-stick spray or olive oil.
- Heat olive oil in a large non-stick frying pan over medium-high heat and squeeze sausage out of the casings and add to the pan, breaking apart with your fingers as you add it. Cook until sausage is nicely browned, breaking apart with a turner or potato masher as it cooks.
- While the sausage cooks, cut 12 pepperoni slices in halves and the rest into fourths. Grate cheese if needed, or measure out desired amount of pre-grated cheese. Cut peppers in half and remove the seeds and cut out the stem end.
- When sausage is nicely browned, push it to the side and add the onions and garlic. Turn heat to medium and cook onions and garlic for 2-3 minutes.
- Add the sauce and the dried oregano, turn heat to low, and simmer until the sauce is reduced and thickened.
- Turn off heat, let the mixture cool for a few minutes, then add the chopped pepperoni and 2 cups grated Mozzarella, stirring gently so it’s well-mixed with the sausage mixture.
- Fill each pepper with the pizza-stuffing mixture, packing it in so all the stuffing is used.
- Bake peppers for 20 minutes. Then remove from the oven and add a generous pinch of grated cheese and four pepperoni halves to the top of each pepper.
- Put back in the oven and bake for 25 minutes more, or until the cheese is nicely browned, peppers are cooked, and the stuffing mixture is bubbling hot.
- Serve Pizza Stuffed Peppers hot and enjoy!
