Delicious and colorful funfetti strawberry cake balls coated in colorful candy melts and topped with unicorn sprinkles.

- 1 (15 oz) box funfetti strawberry cake mix with candy bits
- 1 (8 oz) package cream cheese, softened
- 3 tablespoons unicorn sprinkles (plus extra for topping)
- 1 cup pink candy melts
- 1 cup purple candy melts
- 1 cup blue candy melts
- 1 cup yellow candy melts
Instructions
- Heat-treat the cake mix by microwaving it in two 30-second intervals, stirring between each, then allow it to cool completely.
- In a large bowl, beat the softened cream cheese with a hand mixer until smooth and creamy.
- Add the cooled cake mix and 3 tablespoons of sprinkles to the cream cheese mixture. Mix until fully combined.
- Cover the mixture tightly and refrigerate for 2 hours to firm up.
- Line a baking sheet with parchment paper. Scoop 1-tablespoon portions of the chilled mixture and roll into balls. Place them on the prepared baking sheet.
- Divide candy melts by color into separate bowls. Microwave each in 30-second intervals, stirring until smooth.
- Dip each cheesecake ball into melted candy using a fork, allowing excess to drip off. Place on the baking sheet.
- While the coating is still wet, top each bite with unicorn sprinkles. Repeat for all colors.
- Allow coated bites to set completely before serving or storing.
Notes
- Ensure the cake mix is cooled completely before mixing it with the cream cheese to achieve the right consistency.
- Extra sprinkles can be added on top for decoration.
